The Echapresto Brothers, with two Michelin stars and two Repsol suns at Venta Moncalvillo, directly manage the hotel's gastronomic service, serving both their guests and visitors to the region. Their "Ventilla" concept, in a more relaxed format, includes a restaurant in the main lounge and a more laid-back offering in the "Wine Bar," including the hotel's garden terrace. Their hallmarks are an authentic and pure cuisine that pays homage to local produce, alongside the world's largest selection of wines and vintages from the Rioja Qualified Designation of Origin.

The Wine Bar "Ventilla" at the Palacio is the social heart of the hotel — an intimate and sophisticated space that pays tribute to Rioja wines. A carefully curated selection by the Echapresto Brothers, including the world's largest collection of Rioja Q.D.O. (Qualified Designation of Origin) references and vintages. The landscaped terrace of the Palacio is an oasis of calm in the heart of Haro. Calado
Beneath the ancient palace walls lies El Calado, a singular underground space carved in stone and dedicated to wine. Its intimate atmosphere and refined design make it the ideal venue for private tastings, presentations, exclusive dinners, or small corporate events.
